Noodle Soup


Ingredients
  • 6 cups Chicken Stock
  • 200 gms Noodles boiled and drained
  • 4 Mushrooms soaked in 1/4 cup hot water
  • 1 Carrots chopped in strips
  • 1/4 Cabbage cut into strips
  • Sugar snap peas handful
  • 1 Green onion cut in strips
  • 1 tsp Dark brown sugar
  • 2 tbsp Soy sauce
  • Salt to taste
  • Crushed black pepper to taste
  • White pepper to taste
  • 2 tbsp Coriander leaves fresh
  • 1/2 tsp Ginger grated
Method
  1. In a saucepan boil the stock, soy sauce, sugar, ginger, 2 tbsps soaking water from the mushrooms and seasoning. then add the vegetables and cook for a minute or 2 then add noodles. Garnish with coriander leaves and serve.
