Lamb Chops with Potatoes


Ingredients
  • 6-8 Lamb chops
  • 2 tbsp Olive oil
  • 1/2 cup Lemon juice
  • Salt to taste
  • 1 tbsp Fresh Mint chopped
  • 1 tbsp Fresh Coriander chopped
  • 1/2 cup Oil
  • Fresh Mint to garnish
Ingredients for the kadhai gravy
  • 2 tbsp Oil
  • 8 Tomatoes roughly chopped
  • 1 Bay leaf
  • 1 tsp Garam masala
  • 2 tbsp Yogurt
  • 1 tsp Garlic paste
  • 1 tsp Red chilli powder
  • Salt to taste
  • 1/2 tsp caraway seeds
  • 3 Black peppercorns
  • 2 Medium Potatoes (par boiled and cut into wedges) and sauted slightly
Method
  1. In a bowl mix the olive oil, lemon juie, fresh mint and corriander along with the salt. place the chops in the marinade and coat well using your fingers. cover a refridgerate for atleast 2-3 hrs.To take the kadhai gravy in apan heat the oil add the tomatoes and stir fry for about 2-3 minutes. 
  2. Add the bay leaf , garam masala, chilli powder,salt and black peppercorns and stir fry for a further 5 minutes. lower the heat and add the black cumin seeds cook for a minute and add the potatoes mixing everythin together. remove from heat.
  3. In another pan heat the 1/2 cup oil and fry the chops for 10- 12 minutes till cooked through and drain on a kitchen towel.
  4. Heat the kadhai gravy again to boiling and then add the chops. reduce the heat and leave it to simmer for 5 minutes allowing all the flavors to combine.Serve garnished with mint and lime slices.
