Beef chowmen


Ingredients
  • 1 packet boiled egg noodles
  • ½ kg beef undercut (slices)
  • 1 chopped onion
  • 1 capsicum
  • 2 cup stock
  • ½ cup sliced cabbage
  • 1 inch chopped ginger
  • 2-3 garlic cloves
  • 2-3 spring onion leaves
  • 1 tsp crushed black pepper
  • 1/3 tsp Chinese salt
  • 2 tbsp corn flour
  • 3 tbsp soya sauce
  • 4 tbsp oil
  • Salt to taste
Method
  1. In a large skillet boil the water and add 1 packet egg noodles and 2 tbsp oil. Cook for 5 minutes. first drain the water in a colander and put the noodles under running cold water Then heat the oil in a pan and deep fry half of the noodles. Now place the boiled and fried egg noodles in a serving dish.
  2. Now heat 4tbsps oil in a pan and fry 2-3 garlic cloves , 1 ginger, 1 chopped onion and fry for 2 to 3 minutes. Add ½ kg beef in the pan and stir fry . add 3 tbsp soya sauce, 1 tsp chopped black pepper, 1/3 tsp Chinese salt and salt to taste with 2 cups of stock. 
  3. When the mixture begins to boil then add 1 chopped capsicum and ½ cup cabbage and fry for 3 to 5 minutes. Now mix 2 tbsp of corn flour in a water and add it gradually. 
  4. When the mixture thickens, turn the flame and pour the beef sauce on top of the noodles. Garnish with spring onion leaves and serve.
