Sindhi biryani


Ingredients
  • ½ kg Chicken / mutton
  • 2 Black cardamom
  • 2 Cinnamon
  • 2 Bay leaf
  • 3 Green cardamom
  • 6 Clove
  • 4 to 6 Plum
  • 1 cup Oil
  • ¼ cup Mint
  • ½ cup Yogurt
  • 200 grams Tomato
  • 400 grams Basmati rice
  • 1 tsp Black pepper
  • 1 tsp Cumin
  • 1 tbsp Ginger paste
  • 2 tsp Star aniseed masala
  • 2 tsp Red chili powder
  • 2 tsp Salt
  • 1/8 tsp Food color
  • 1 ½ tbsp Garlic paste
  • Green chilies as required
  • Onions as required
  • Potatoes as required
  • All spice as required
Method
  1. In a frying pan fry the chopped onions till they turn brown. Then add 1/2kg meat, potato and 1tbsp ginger paste and cook for 10 minutes. Now put 2tsp aniseed, whole all spice,2tsp red chili powder, 1 1/2tsp garlic paste, 1tsp cumin, 2 black cardamoms,6 cloves, 2 pieces of cinnamon, 1tsp black pepper, 2 tsp salt, 3 green cardamoms,2 bay leaves,4-6 plums,1/2cup yogurt and green chilies to cook for 5 minutes. 
  2. Now pour ½ glass of water and cook it on low flame till the meat tenders. Now boil the soaked rice and strain it. Take a pan and place a layer of rice then, place the layer of meat and place three layers of tomato, green chilies and coriander and sprinkle the food color from top. Cover the pan and simmer. In the end garnish it with fried onions and serve it with salad.
