Parmesan Crusted Fish Steaks


Ingredients
  • 2 tbsp butter
  • 2 oz bread crumbs (preferably wholemeal)
  • 2  Grated rind and juice of lemons
  • 1/2 tsp Rosemary dried
  • 2 tbsp Fresh parsley
  • 4 pieces of Beckti each 150 gms approx (cut like steaks)
  • 1 Garlic clove
  • 3 tbsps Extra virgin olive oil
  • 1 small Red chilli finely chopped
  • Parmesan cheese 3 tbsp
  • Walnuts 1 oz chopped roughly
Method
  1. Melt butter in a frying pan . Remove pan from the heat and add the breadcrumbs, walnuts, lemon rind juice of 1 lemon ,half of the rosemary and fresh parsley. Mix well to combine
  2. Line a roasting dish with foil. Press the breadcrumb mixture over the fish steaks and place in the roasting pan. Bake in a preheated oven for 25 mins at 200 C.
  3. Mix the garlic the remaining lemon rind and juice, rosemary, parsley and chilli in a bowl. Beat in the olive oil and mix well to combine. Drizzle this mixture over the fish as soon as its cooked. Serve hot!
