Chinese mixed pickle
Ingredients
- 1 Capsicum
- 1 Cucumber
- 1 Beetroot
- 2 Carrots
- 2 Onions
- 2-3 Red chili whole
- 2 cup Sugar
- 2 cup White vinegar
- 1 Ginger inch piece
- 3-4 Spring onion
- Salt to taste
Method
- Take a pan and put 2 cups of sugar, 2 cups of white vinegar, salt to taste and 1 ½ cup of water and cook till the sugar dissolves.Remove from flame and allow to cool.
- Now chop 2 carrots, 1 cucumber, 2-3 red chili whole, 1 capsicum, 3-4 spring onions, 1 beetroot, 1 inch piece of ginger and 4 onions.
- In a saucepan boil water on a high flame and add all the vegetables and cook them for 4-5 minutes .Strain the water. Now put all the vegetables in a jar. Pour two cups of the sugar mixture and close the jar tightly.
