Chinese mixed pickle


Ingredients
  • 1 Capsicum
  • 1 Cucumber
  • 1 Beetroot
  • 2 Carrots
  • 2 Onions
  • 2-3 Red chili whole
  • 2 cup Sugar
  • 2 cup White vinegar
  • 1  Ginger inch piece
  • 3-4 Spring onion
  • Salt to taste
Method
  1. Take a pan and put 2 cups of sugar, 2 cups of white vinegar, salt to taste and 1 ½ cup of water and cook till the sugar dissolves.Remove from flame and allow to cool. 
  2. Now chop 2 carrots, 1 cucumber, 2-3 red chili whole, 1 capsicum, 3-4 spring onions, 1 beetroot, 1 inch piece of ginger and 4 onions. 
  3. In a saucepan boil water on a high flame and add all the vegetables and cook them for 4-5 minutes .Strain the water. Now put all the vegetables in a jar. Pour two cups of the sugar mixture and close the jar tightly.
