- 24 chicken wings with skin
- 3/4 cups vegetable oil
- 1 large head of garlic, peeled and crushed
- Bunch of cilantro, finely chopped
- 4 chiles, thinly sliced
- 1/4 cup thinly sliced garlic chives
- 1/2 Kg medium type tomatoes, dice
- 2 tsp freshly cracked black peppertions
- 1/3 cup lemon juice
- Pinch of salt
Directions
- Rinse the chicken wings in cold water and drain. Heat the oil in a pan and shallow fry the wings, until golden brown and almost tender and cooked .
- Add all other ingredients ,crushed garlic, cilantro, chilies,tomatoes,garlic chives , and lemon juice. Season with salt and pepper.and cover the cooking pan for five minutes .
- Transfer the chicken wings to a serving dish and drizzle with the cooking juice. Garnish with lettuce leaves, and lemon wedges.
