Roasted Chicken with Rice, Roasted Potatoes and Tomatoes
Ingredients for Roasted Chicken
- ½ kg chicken
- 1 tbsp garlic paste
- 2 tbsp yogurt
- ¼ tsp nutmeg
- A pinch of saffron
- 1 lemon squeezed
- 1 tsp oil
- Salt n black pepper to taste
Ingredients for rice
- ½ kg basmati rice
- 1 tsp salt
- ¼ tsp whole black pepper
- 2 to 3 cloves
- 1 cinnamon stick
- 1 black cardamom
- ¼ tsp white cumin
- 2 tbsp oil
- Few drops of saffron color
- ½ finely chopped onion
- ½ tsp garlic
Ingredients for Roasted potatoes and tomatoes
- 100 gm potatoes
- 100 gm tomatoes
- A pinch of salt
- A pinch of black pepper
- ½ tsp garlic paste
- 1 tsp oil
Directions
- Add 1 tbsp garlic paste, 1 tbsp yogurt, 1 squeezed lemon, ¼ tsp nutmeg, 1 tsp oil and a pinch of saffron to ½ kg chicken and marinate for 10 to 12 minutes.
- Soak ½ kg basmati rice for half an hour. Now roast marinated chicken for half an hour at 200 degrees. Peel and chop 100 grams potatoes.
- Chop 100 grams tomatoes and add ½ tsp garlic paste, 1 tsp oil, a pinch of salt and black pepper and marinate.
- Place the marinated tomatoes and potatoes with chicken in the oven to roast. In a medium sized cooking pot, heat 2 tbsp oil.
- Add ½ finely chopped onion, ½ tsp garlic paste, ¼ tsp whole black pepper, 2 to 3 cloves, 2 cinnamon sticks, 1 black cardamom and ½ tsp white cumin and stir for a couple of minutes.
- Now add soaked rice, salt n black pepper and water as required. When water comes to a boil, cover the lid and let it cook until water dries up.
- Serve rice with roasted chicken, tomatoes and potatoes.
