Roasted Chicken with Rice, Roasted Potatoes and Tomatoes


Ingredients for Roasted Chicken
  • ½ kg chicken
  • 1 tbsp garlic paste
  • 2 tbsp yogurt
  • ¼ tsp nutmeg
  • A pinch of saffron
  • 1 lemon squeezed
  • 1 tsp oil
  • Salt n black pepper to taste
Ingredients for rice
  • ½ kg basmati rice
  • 1 tsp salt
  • ¼ tsp whole black pepper
  • 2 to 3 cloves
  • 1 cinnamon stick
  • 1 black cardamom
  • ¼ tsp white cumin
  • 2 tbsp oil
  • Few drops of saffron color
  • ½ finely chopped onion
  • ½ tsp garlic
Ingredients for Roasted potatoes and tomatoes
  • 100 gm potatoes
  • 100 gm tomatoes
  • A pinch of salt
  • A pinch of black pepper
  • ½ tsp garlic paste
  • 1 tsp oil
Directions
  1. Add 1 tbsp garlic paste, 1 tbsp yogurt, 1 squeezed lemon, ¼ tsp nutmeg, 1 tsp oil and a pinch of saffron to ½ kg chicken and marinate for 10 to 12 minutes.
  2. Soak ½ kg basmati rice for half an hour. Now roast marinated chicken for half an hour at 200 degrees. Peel and chop 100 grams potatoes.
  3. Chop 100 grams tomatoes and add ½ tsp garlic paste, 1 tsp oil, a pinch of salt and black pepper and marinate.
  4. Place the marinated tomatoes and potatoes with chicken in the oven to roast. In a medium sized cooking pot, heat 2 tbsp oil.
  5. Add ½ finely chopped onion, ½ tsp garlic paste, ¼ tsp whole black pepper, 2 to 3 cloves, 2 cinnamon sticks, 1 black cardamom and ½ tsp white cumin and stir for a couple of minutes.
  6. Now add soaked rice, salt n black pepper and water as required. When water comes to a boil, cover the lid and let it cook until water dries up.
  7. Serve rice with roasted chicken, tomatoes and potatoes.
