Nargisi koftae


Ingredients for koftae
  • 8 Eggs (boiled)
  • 1 kg Beef/mutton (without fat and finely cut)
  • 2 Onions (browned)
  • 2 tbsp Poppy seeds
  • 1 tsp White Cumin
  • 6 Almonds (sautéed)
  • 8 Whole black pepper
  • Salt as required
  • 2 tbsp Chickpeas
  • 1 tsp Black cumin
  • 8 Small cardamom
  • 1 tsp Red chili (crushed)
Ingredients for curry
  • 1 tbsp Red chili (ground)
  • 1 tsp All spice powder
  • 1/2cup Yogurt
  • 3 Onions (finely chopped)
  • 1 cup Ghee/oil
  • 2 tbsp Coriander (powdered)
  • 4 Small cardamom
  • 1 tbsp Ginger/ garlic paste
  • Salt as required
Directions
  1. In a large skillet boil of the meat and in the meantime grind all the masala together.Now mix the boiled meat, raw meat, brown onions and masala by hand and process in a chopper. Add one raw egg and mix by hand.
  2. Grease your hand, take a bit of the meat mixture and spread on your hand. Place the egg onto the flattened meat and wrap it around. Repeat the same procedure with the rest of the eggs.Now take a frying pan and heat some oil .On a low flame fry the koftas till they turn brown.
  3. In a large skillet heat oil and fry onions till they turn golden brown. Remove the onions and spread them on a large newspaper. Squeeze the oil out by the hands.Now take a bowl, add the yogurt and masalas. Mix well.
  4. In the same skillet fry the yogurt mixture and add the brown onions leaving only a few behind.
  5. Now slowly add in the koftas. Pour in a warm glass of water and slowly move the skillet around until the oil forms a separate layer on top.
  6. Add another glass of warm water and cover the skillet. Place it on a a large flat pan and simmer for minutes.
  7. To serve take a large serving dish, first pour the masala then take a knife that has been warmed and slice the koftas lengthwise. Place them on top of the masala.
